Healthy Summer Picnics!

Who doesn’t love a picnic!? Whether you are packing a lunch for the beach or going to a neighbor’s house for a barbecue you will want to try these healthy salads that will satisfy the hungry crowds.  In the following recipes I am spotlighting CABBAGE, which I feel is often overlooked but is loaded with vitamins and minerals such as vitamin K and vitamin C.  Cabbage is also high in fiber and helps improve digestion.

Cilantro Lime Coleslaw

1 head green or purple cabbage, shredded

4 green onions, chopped

½ bunch fresh cilantro, chopped

6 T fresh lime juice

Salt and pepper to taste

Combine all ingredients and let sit for 30-60 minutes.  Serve with chicken or pork tenderloin.

Sesame Ginger Coleslaw

6 cups red or green cabbage 9or both), shredded

1 cup carrots, shredded

½ bunch fresh cilantro, chopped

1/3 cup toasted cashews

1 T toasted sesame seeds

2 green onions

¼ cup rice vinegar

1 tsp fresh ginger

1 T honey

¼ cup olive oil

2 T sesame oil

Combine cabbage and next 5 ingredients in a large bowl and set aside.  Next combine ingredients for dressing and toss with cabbage.  Make it a meal by adding grilled chicken!
