Eat Fresh, Eat Local, and Say Hello to Michigan Strawberries

Michigan Summers are the best!  We get to enjoy a variety of outdoor activities and an abundance of fresh fruit and vegetables at our fingertips.  One of my favorite things to do each Summer is to pick seasonal fruit and June is the month for strawberries.  Strawberries are one of the most loved types of fruit for their sweet taste and versatility in recipes – but they also have an impressive amount of health benefits which may surprise you.

Studies link strawberry consumption with improved eye health, protection against skin damage, lower levels of inflammation and even decreased arthritis pain, due to their ability to fight free radical damage.

Strawberries have just 49 calories per cup, a low amount of sugar and are a good source of dietary fiber making them one of the most nutrient dense fruits out there.

My favorite place to pick strawberries is Mandingo Farms in Paw Paw.  The strawberries should be ready for picking next week!  What do you do with all of those strawberries, you ask??

  • Freeze berries to enjoy throughout the Fall and Winter months.
  • Snack on berries throughout the day.
  • Toss fresh berries in a spinach salad with cucumber, red onion and feta cheese. Drizzle with balsamic vinaigrette.  Delicious!
  • Make strawberry smoothies. See recipe below.
  • Eat for desert with dark chocolate.

Strawberry Smoothie

1 handful of baby spinach
½ small avocado
1 cup strawberries (fresh or frozen)
1 banana
1 ½ cup coconut water or water

Blend all ingredients to desired consistency.  If you use fresh strawberries, you may want to add some ice.  Enjoy!
